Question about 360 J heads???

I am still confused about the 1.88 heads, vs. 2.02 heads. ](*,)
Most of the articles I read have to do with the J heads on a 318.
I want to know about the 360.
I have basically a stock motor. I wanted to build it up a bit while it was still out of the car. I figured getting 2.02 heads would be a good start, BUT from what I read it would be a bit overkill for my stock engine. But then what was the purpose of stock 2.02 heads then?
Yes, I have the stock hwy gears, and no stock converter, but that's just for now. That will be added down the road. (I hope)
In my thinking a good cam (LUN-60402LK) and the 2.02 heads milled for added compression would be a good start, BUT according to what I read I'd be better off with the 1.88. Could someone explain this to me?
and If I'm milling the heads for a 360, how far would they need to be milled?
